Quinoa, Beet And Feta Salad - cooking recipe
Ingredients

2 oz quinoa
1 tbsp lemon juice
1 tbsp olive oil
1 oz baby spinach
1 None scallion, trimmed and sliced
2 oz cooked beets, diced
2 oz feta, diced
1/2 small apple, cored and sliced
1 oz walnut halves
Preparation

Bring 2/3 of a cup of salted water to a boil. Add the quinoa, cover and cook over a medium-low heat for 15-20 mins until tender. Drain if necessary and cool to room temperature.
For the dressing, whisk together the lemon juice and olive oil. Season to taste with salt and pepper. Set aside.
Toss together the spinach, scallion, beets, feta and apple, then add the dressing and quinoa. Transfer to a serving platter and garnish with walnuts.
