Smoked Salmon Cucumber Cups - cooking recipe

Ingredients
    5 None Lebanese cucumbers, ends trimmed
    5.25 oz smoked salmon, shredded or diced
    1/2 cup sour cream
    1 clove garlic, crushed
    1 tbsp mint, chopped
    1 tbsp dill, finely chopped, plus extra, to serve
    1 tbsp lime juice
Preparation
    Peel and finely dice 1 cucumber. Place in a bowl. Cut remaining cucumber into 1 inch slices and, using a melon baller, scoop out seeds, leaving a base, to form cups.
    Add remaining ingredients to diced cucumber and mix well. Season to taste. Fill each cup with salmon mixture, top with extra dill and serve.
