Crisscross Chicken Toasts - cooking recipe

Ingredients
    18 oz ground chicken
    1 None large egg, lightly whisked
    2 tbsp cornstarch
    5 oz coarsely grated carrot
    5 oz coarsely grated zucchini
    1/4 cup tomato sauce
    12 thick slices whole wheat bread, crust removed
    1/4 cup freshly grated Parmesan cheese
    None None mixed greens, to serve
Preparation
    Preheat oven to 350\u00b0F. Grease and line a baking tray with parchment paper.
    Combine ground chicken, egg, cornstarch, carrot, zucchini and tomato sauce. Arrange bread on prepared tray. Distribute chicken mixture between bread slices, spreading evenly over bread to cover. Sprinkle with Parmesan and bake for 15 mins, or until golden brown and chicken is cooked through.
    Cut each toast into 4 rectangles. Arrange chicken toasts in a crisscross pattern on serving plates. Serve with salad.
