Orange, Fig And Cognac Cake - cooking recipe

Ingredients
    5 None eggs, separated
    1 cup granulated sugar + 2 tbsp
    1/3 cup olive oil
    1 cup all-purpose flour
    1 tsp baking powder
    1 None orange, zested and juiced
    1/4 cup cognac
    4 None figs, cut into wedges
    2 tbsp pistachios, chopped
Preparation
    Preheat oven to 325\u00b0F. Grease and flour an 8 inch springform pan. Beat egg yolks, 1/4 cup sugar and a pinch of salt. Gradually add oil. Fold in flour, baking powder and orange zest. Whip egg white until stiff, gradually adding 1/3 cup sugar. Fold into batter, in 3 additions. Transfer to pan, smooth and bake for 30-40 mins, until a skewer comes out clean. Allow to cool in pan.
    In a saucepan, bring cognac, orange juice, remaining sugar and 1/4 cup water to a boil and simmer for 5 mins. Allow to cool then pour over figs and marinate for 30 mins.
    Remove cake from pan, drizzle with fig syrup and arrange figs on top. Sprinkle with pistachios and serve.
