Shrimp With Baked Feta And Asparagus - cooking recipe

Ingredients
    4 tbsp olive oil
    1 None onion, chopped
    2 cloves garlic, chopped
    1 None red pepper, seeded and finely chopped
    2 cans (14 oz each) diced tomatoes
    2 lbs asparagus, woody ends snapped off
    1 cup loosely packed parsley, coarsely chopped
    1 1/2 cups crumbled feta cheese
    1 lb large shrimp, peeled and deveined
Preparation
    Preheat the oven to 400\u00b0F. Heat 2 tbsp of the oil in an ovenproof skillet on medium heat. Saute the onion, garlic and pepper until softened. Add the tomatoes, breaking up roughly with a wooden spoon. Season with salt, black pepper and a pinch of sugar. Simmer for 20 mins.
    Cook the asparagus in boiling water for 3-5 mins, until just tender. Drain, refresh with cold water and cut into chunks. Add to the tomato sauce along with the parsley and feta.
    Bake for 12-15 mins.
    Heat remaining 2 tbsp oil in a large skillet on medium-high heat. Cook the shrimp for 4 mins, turning. Season with salt and black pepper. Remove the pan from the oven and stir in the shrimp. Serve immediately.
