Applewood Smoked Beer Can Chicken - cooking recipe

1/2 cup applewood chips (optional)
2 tbsp mixed chicken seasoning, like McCormick
2 tbsp mustard
2 tbsp fresh thyme leaves, chopped
2 cans (12 fl oz each) beer, like Budweiser
1 None roasting chicken (about 5 lbs)
None None fresh thyme, lemon leaves, red & green apple slices (for garnish)

Heat grill. Place aluminum foil drip pan in the center of the bottom of the grill. Soak wood chips in water or beer for half an hour. Drain. Wrap in heavy duty aluminum foil. Pierce top with knife. Place in the bottom of the grill.
In a bowl, combine seasoning mix, mustard, thyme and half a cup of beer. Divide mixture in half. Place the chicken over beer can. Pour half of the remaining beer into the drip pan. Brush the chicken with half of the seasoning paste. Place on the grill over drip pan. Cover and cook for 1 and a half hours or until done. After 45 mins, pour the remaining beer into the drip pan.
Remove the chicken to platter, remove beer can, brush with remaining seasoning and let rest for 20 mins. Pour pan juices into a small pan. De-grease juices. Heat and serve with chicken.
