Ham, Cheese And Corn Croquettes - cooking recipe

Ingredients
    7 tbsp butter
    1/3 cup seasoned flour, plus 1/2 cup extra
    1 1/4 cups warm milk
    1 (10 oz) can corn kernels, drained
    7 oz ham, finely chopped
    3 oz shredded cheese
    2 None spring onions, finely sliced
    2 None large eggs, lightly beaten
    1 cup dried breadcrumbs
    None None vegetable oil, for deep-frying
    None None salad, to serve
Preparation
    In a small saucepan, melt butter over medium heat. Add 1/3 cup flour and cook, stirring, for 1 min. Gradually stir in milk until smooth. Cook, stirring, until mixture boils and thickens. Simmer for 3 mins, stirring. Season to taste and add corn, ham, cheese and onions. Chill for 1 hour, or until firm.
    Shape 2 tablespoonfuls of mixture into logs. Arrange on a baking tray lined with parchment paper and chill for 30 mins.
    Carefully coat logs in extra seasoned flour, dip into egg then roll in breadcrumbs. Arrange on tray and chill for 10 mins.
    In a large, heavy-bottomed saucepan, heat oil to 350\u00b0F. Working in batches, deep-fry croquettes for 4-5 mins, until golden brown. Drain on paper towels. Serve with salad.
