Ingredients

2 - 15 oz cans cherries in syrup, drained, 1 cup syrup reserved
1/2 cup granulated sugar
1 None cinnamon stick
4 tsp cornstarch, mixed with 1 tbsp water
1/2 cup butter, softened
3 None eggs
1 cup all-purpose flour
1 tsp baking powder
2 cups milk
1 tsp vanilla extract
3 tbsp poppy seeds
None None Greek yogurt, to serve
None None honey, to serve
Preparation

For the cherry compote, combine reserved cherry syrup and 1/4 cup sugar. Heat gently until sugar dissolves. Add cinnamon stick and simmer for 5 mins then add cherries and cornstarch slurry and simmer for 3-4 mins, stirring, until thickened.
For waffles, cream butter and remaining sugar then gradually add eggs. Add flour, baking powder, milk, vanilla extract and poppy seeds and mix until smooth. Preheat a waffle maker and spray lightly with oil. Add 1/10 of batter and cook until golden. Repeat to make 10 waffles in total. Serve hot topped with Greek yogurt, honey and cherry compote.
