Buttermilk Mash With Crispy Bacon - cooking recipe

Ingredients
    3 lbs potatoes, peeled and chopped
    1 tbsp vegetable oil
    4 small onions, thinly sliced
    4 slices bacon, diced
    5 tbsp butter, at room temperature
    3/4 cup buttermilk, warmed
    3/4 cup milk, warmed
    Pinch None grated nutmeg
Preparation
    Bring a large saucepan of salted water to a boil on high heat. Add the potatoes. Reduce heat to medium and simmer for 15-20 mins, or until tender. Meanwhile, heat the oil in a large skillet on medium heat. Add the onions and bacon and fry for 10-12 mins, stirring occasionally.
    Drain the potatoes. Return to the pan. Add 3 tbsp of the butter, buttermilk, milk and nutmeg. Mash until smooth. Season to taste. Stir remaining 2 tbsp butter into the onions and bacon. Serve the potatoes topped with bacon mixture.
