Prosciutto And Papaya Salad - cooking recipe

Ingredients
    1 None large papaya, peeled, halved and sliced, seeds reserved
    3 tbsp olive oil
    1 None lemon, zested and juiced
    6 oz prosciutto or Parma ham
    3 oz arugula
Preparation
    For the dressing, crush 2 tbsp of the reserved papaya seeds and place in a small bowl with the oil, lemon zest and lemon juice. Season and whisk until combined.
    Place the ham and sliced papaya in a large dish and drizzle with the dressing. Add the arugula and toss gently. Serve immediately.
