Farfalle With Basil Pesto - cooking recipe

Ingredients
    13.25 oz farfalle pasta
    10.5 oz silken tofu, drained
    3 tbsp fresh basil leaves + extra leaves, to garnish
    2 oz Parmesan cheese, grated
    2 tbsp olive oil
    1 clove garlic, minced
Preparation
    Cook farfalle in boiling, salted water according to package directions. Drain.
    Meanwhile, combine remaining ingredients in a food processor. Process until smooth. Season to taste then toss with pasta. Heat for 1-2 mins, until heated through. Garnish with reserved basil leaves.
