Gazpacho Shooters - cooking recipe
Ingredients

2 cups chunky tomato salsa
8 oz tomato juice
1 None small cucumber
1 None small yellow pepper, diced
1 None lime, zested and juiced
1 pinch cayenne
1/4 cup chopped fresh cilantro leaves
Preparation

In a large bowl, mix together salsa, tomato juice, 1/2 cup diced cucumber, yellow pepper, 1 tsp lime zest, 2 tbsp lime juice, cayenne and cilantro. Season. Chill for 1 hour.
Meanwhile, cut 3 inch long matchsticks from remaining cucumber. Distribute between shot glasses then pour in gazpacho.
