Crisp Salami And Artichoke Pasta - cooking recipe

Ingredients
    13 oz shell pasta
    6 oz marinated artichoke quarters, drained, reserving 1 tbsp oil
    1 None large red pepper, thinly sliced
    3.5 oz salami, thinly sliced
    2 None small zucchini, thinly sliced
    1 x 14 oz jar pasta sauce
    None None Baby spinach, to serve
Preparation
    Cook pasta according to package instructions. Drain and return to pan.
    Meanwhile, heat reserved oil in a large frying pan over moderate heat. Add pepper and cook, stirring, 5 mins or until soft. Add salami and zucchini and cook, stirring, 5 mins, or until zucchini is just tender. Add artichokes and pasta sauce to pepper mixture. Cook, stirring, until heated.
    Add sauce mixture to pasta and toss to combine. Serve topped with spinach leaves.
