Ground Beef, Parmesan And Pea Risotto - cooking recipe

Ingredients
    2 tbsp olive oil
    1 None onion, finely chopped
    2 cloves garlic, crushed
    8 oz ground beef
    3/4 cup arborio rice
    1/2 cup white wine
    3 cups chicken stock, heated
    1 cup frozen peas, thawed
    8 None cherry tomatoes, halved
    1/2 cup grated Parmesan cheese, plus additional, to serve
    2 tbsp snipped chives
    1/2 None lemon, peel grated
Preparation
    Heat oil in a medium saucepan on high heat. Saute onion and garlic for 2-3 mins, until onion is tender. Add ground beef and brown well, breaking up with a spoon as it cooks.
    Stir in rice. Cook for 1 min, stirring, until rice grains are coated in oil. Add wine. Cook, stirring, for 2-3 mins. until all liquid is absorbed.
    Add 1 cup of hot stock to rice mixture; stir constantly until liquid is absorbed. Continue to add stock, 1 cup at a time, stirring constantly until liquid is absorbed before adding more (this will take 25-30 mins or until rice is tender but firm to the bite).
    Add peas, tomatoes, Parmesan cheese, chives and lemon. Season to taste. Cook, stirring, for 1 min. Serve sprinkled with additional Parmesan cheese.
