Leek, Salami And Egg Tarts - cooking recipe

Ingredients
    1 sheet frozen puff pastry, thawed
    1 tbsp olive oil
    1 None leek, trimmed, washed and thinly sliced
    2 oz salami, chopped
    4 None eggs
    4 None sun-dried tomatoes, quartered
    1/4 cup grated Cheddar cheese
Preparation
    Preheat the oven to 400\u00b0F. Line a baking pan with parchment paper.
    Cut puff pastry into 4 even squares and place on prepared pan. Score a border around each square, 1/4 inch from edge. Bake 15 mins.
    Meanwhile, heat oil in medium skillet on medium heat. Saute leek and salami for 4-5 mins, until leek is tender. Remove from heat.
    Gently press down puffed center of pastry squares. Divide leek mixture among each square. Make an indentation in center of leek mixture. Break an egg into each indentation. Sprinkle with tomatoes and cheese
    Bake 5-8 mins, until eggs are cooked.
