Roast Shrimp With Mushroom Butter - cooking recipe

Ingredients
    1/2 cup unsalted butter, at room temperature
    1/4 cup shallots, chopped
    1 clove garlic, chopped
    6.5 oz fresh mushrooms, such as baby Portobellos, 1 oz finely chopped, remainder quartered
    1 tsp fresh thyme leaves, chopped
    2 tbsp lemon juice
    16 None large raw shrimp, peeled, deveined
Preparation
    Preheat oven to 475\u00b0F.
    Melt 1 1/2 tbsp butter in a large nonstick frying pan over medium heat. Saute shallots and garlic for 1 min. Add finely chopped mushrooms and thyme. Saute for 2 mins. Remove from heat and mix in 4 tbsp butter and lemon juice. Season.
    Arrange shrimp in a single layer on a lightly oiled baking tray. Spoon mushroom mixture over shrimp. Bake for 5 mins. Turn shrimp over and bake for 5 mins.
    Meanwhile, to make the mushroom butter, heat remaining butter in a large frying pan over high heat. Add quartered mushrooms and saute for 3-4 mins, until golden. Season.
    To serve, arrange shrimp in serving dishes. Spoon mushroom butter over top.
