Lime And Vanilla Madeleines - cooking recipe

Ingredients
    2 None large eggs
    2 tbsp granulated sugar
    4 tbsp powdered sugar
    2 None vanilla beans, split lengthwise, seeds scraped out
    3 tbsp self-rising flour, sifted twice
    3 tbsp all-purpose flour, sifted twice
    5 1/2 tbsp butter, melted
    1 tsp lime zest
    1 tbsp lime juice
Preparation
    Preheat oven to 400\u00b0F. Grease 2 (12-cup) madeleine pans.
    In a stand mixer, whisk eggs, sugar, 2 tbsp powdered sugar and vanilla bean seeds until thick and creamy. Sift flour over top. Combine butter, lime zest, lime juice and 1 tbsp hot water then pour down the side of the bowl and mix until combined.
    Drop rounded tablespoonfuls of mixture into pan recesses. Bake for 10 mins. Tap hot pan firmly on the counter to release madeleines. Immediately transfer to wire racks lined with parchment paper to cool completely. Serve dusted with remaining powdered sugar.
