Scalloped Potatoes - cooking recipe

4 slices bacon, chopped
2 1/4 lb potatoes, peeled, sliced thinly
3.5 oz mozzarella cheese, grated
1 (15 oz) can cream of mushroom soup
1 1/4 cups heavy cream
2 tsp fresh thyme, chopped + extra, to serve
Preparation

Preheat oven to 400\u00b0F. Lightly grease a shallow baking dish. Heat a large saucepan over high heat and cook bacon for 3-4 mins, until golden. Drain on paper towels. Layer 1/3 potato slices in prepared dish. Sprinkle with 1/3 bacon and 1/3 cheese. Repeat with remaining potato, bacon and cheese.
Meanwhile, heat soup, cream and thyme, stirring, until almost boiling. Pour over potatoes, shaking dish to allow mixture to run through. Bake, covered, for 40 mins. Uncover and bake for 25-30 mins, until top is golden. Let cool for 10 mins then serve sprinkled with reserved thyme.
