Potato, Crayfish And Dill Salad - cooking recipe

2 1/4 lbs new potatoes
8 tbsp sour cream
3 tbsp horseradish sauce
1 tbsp sugar
5 tbsp white wine vinegar
1 None cucumber, thinly sliced into ribbons
5.25 oz cooked crayfish tails
2 tbsp dill sprigs
Preparation

Cook the potatoes in boiling, salted water for 12-15 mins. Meanwhile, mix the sour cream, horseradish, sugar and vinegar together and season. Mix in the cucumber.
Drain the potatoes and rinse under cold water. Peel then thickly slice. Gently toss the potatoes, crayfish and dill together and divide between 4 plates. Add ribbons of cucumber on top and drizzle each plate with more of the dressing. Serve.
