Lime Chicken On Lemongrass Skewers - cooking recipe
Ingredients

6 stalks fresh lemongrass (each 12 inches long), 1 inch trimmed off ends then finely chopped
1/3 cup peanut oil
1 tbsp finely grated lime zest
2 tbsp finely chopped fresh cilantro leaves
6 None chicken breast fillets, each cut crosswise into 3 strips
1/4 cup lime juice
2 None fresh small red bird's eye chilies, finely chopped
1/3 cup macadamia nut oil
1 tbsp raw sugar
1 clove garlic, minced
Preparation

Combine finely chopped lemongrass, peanut oil, lime zest and cilantro in a large shallow dish.
Thread 3 strips of chicken onto each lemongrass stalk. Add to lemongrass marinade and turn to coat. Cover and chill for 3 hours, or overnight.
Preheat grill. Cook skewers until chicken is golden brown and cooked through.
Meanwhile, whisk together remaining ingredients. Serve with chicken skewers.
