Poached Pear And Quince With Almond Crumble - cooking recipe

Ingredients
    3 1/3 cups granulated sugar
    2 1/4 lb quinces, peeled, quartered, cored
    2 strips lemon zest
    1/2 cup all-purpose flour
    6 1/2 tbsp butter, chopped
    1/3 cup brown sugar
    1 tsp ground cinnamon
    3/4 cup almonds, roughly chopped
    1 1/2 lb pears, peeled, halved, cored
    2-3 tbsp lemon juice
Preparation
    Combine sugar and 3 cups water in a large saucepan. Stir over low heat until sugar dissolves. Add quinces and lemon zest. Bring to a boil, cover and simmer for 1 hour 45 mins, or until tender and rosy pink.
    Meanwhile, for the almond crumble, preheat oven to 325\u00b0F. Place flour in a medium bowl. Cut in butter until mixture resembles breadcrumbs. Add brown sugar, cinnamon and almonds and mix until combined. Transfer to a baking tray and bake for 30 mins, or until browned.
    Remove quinces from syrup with a slotted spoon. Add pears to same syrup and bring to a boil. Reduce heat and simmer, uncovered, for 10 mins, or until tender. Remove with a slotted spoon and mix with quinces.
    Boil syrup, uncovered, until reduced to 2 cups. Add lemon juice to taste.
    Spoon a little syrup over fruit. Sprinkle with almond crumble.
