Spicy Sweet Potato And Kale Stew - cooking recipe

Ingredients
    2 tbsp olive oil
    2 None red onions, peeled and sliced
    1/2 tsp curry powder
    1/4 tsp ground turmeric
    1 1/2 lb sweet potatoes, peeled and cubed
    1 None red chili, deseeded and chopped
    2 cups vegetable stock
    2 - 13.5 oz cans diced tomatoes
    1/2 lb kale, coarsely chopped
    3 tbsp pine nuts, toasted
Preparation
    Heat oil in a large pan, add onion and saute for 3 mins. Add curry powder and turmeric then add sweet potato and chili and cook for 2-3 mins. Add stock and tomatoes, bring to a boil then simmer for 8 mins. Add kale, cover and steam for 10-12 mins until tender. Season and add a pinch of sugar. Serve in hot bowls and sprinkled with pine nuts.
