Raw Super Seeds And Citrus Breakfast Granola - cooking recipe
Ingredients

1 cup sunflower seeds
1 1/2 cups pumpkin seeds
5 tbsp sesame seeds
4 tbsp tahini paste
4 tbsp raw honey, raw agave or maple syrup, plus extra for brushing
1/4 cup freshly squeezed orange juice
1/2 tsp vanilla extract
1/2 cup coconut flakes or chips
5 tbsp chia seeds
1/4 cup goji berries
1/2 tsp ground cardamom
1 tsp ground cinnamon
1/3 cup chopped pitted dates
1 tbsp cacao nibs (optional)
1 None orange, finely sliced into thin rounds with a sharp knife or mandolin

2 None mandarin oranges, peeled, cut into round slices
2 None oranges, peeled, cut into segments
1 None grapefruit, peeled, cut into segments
2 None bananas, peeled, sliced thinly
Preparation

Soak sunflower, pumpkin and sesame seeds for 6-8 hours. Rinse thoroughly then set aside.
Whisk together tahini, honey, orange juice and vanilla in a bowl and set aside.
Combine coconut, chia seeds, goji berries, spices, dates, cacao nibs (if using) and a pinch of salt in a large bowl and set aside.
In a food processor, blend 1/2 the dry ingredients with 1/2 the seeds and sliced orange until lightly chopped. Add honey and tahini mixture then process until well combined and mixture sticks together. Add remaining dry ingredients and seeds and lightly pulse until combined but still chunky.
Spread mixture out on a baking tray lined with parchment paper. Bake on lowest setting possible with door slightly ajar for 12-16 hours. Once dehydrated, break mixture up and store in an airtight container.
For the citrus fruit salad, toss all ingredients together in a medium bowl. Set aside.
Serve granola with citrus fruit salad.
