Sweet Curried Sausages - cooking recipe

1 tbsp oil
2 None onions, sliced
1 lb chicken, pork or beef sausages
2 None potatoes, skin on, diced
2 tsp curry powder
1 can (14 oz) diced tomatoes
1 cup coconut milk
1 cup chicken stock
1/2 tsp brown sugar
1 can (15 oz) chickpeas, drained and rinsed
1/3 cup golden raisins
1 small Granny Smth apple, cored and chopped
1/4 cup parsley leaves

Heat oil in large saucepan on medium heat. Saute onion 3-4 mins, until tender. Add sausages and cook 2 mins, turning, until browned.
Stir in potato and curry powder. Cook, stirring, 1-2 mins, until fragrant. Stir in tomatoes, coconut milk, stock and sugar. Bring to a boil. Stir in chickpeas and raisins.
Reduce heat to medium and simmer, uncovered, 15-20 mins, until potato is tender. Stir in apple. Serve sprinkled with parsley.
