Burgers With Sweet Pepper Relish - cooking recipe
Ingredients

2 None red or yellow bell peppers, deseeded and cut into chunks
1 None onion, peeled and finely diced
1 None red chili pepper, deseeded and chopped finely
1/4 cup white wine vinegar
1 cup orange juice
1 tsp mustard seeds
14 oz can corn, drained
2 tbsp apricot jam
2-3 tbsp tomato ketchup
1/2 bunch cilantro, chopped coarsely
1 1/2 lbs ground beef
1 None egg
2 None tomatoes, sliced
1/2 None romaine lettuce
4 None hamburger buns, cut in half
Preparation

For the relish, bring the peppers, onion, chili pepper, vinegar and orange juice to a boil in a saucepan. Season to taste and add the mustard seeds. Simmer over medium heat 25 mins. Add the corn. Season with jam and ketchup and set aside to cool. Stir in the chopped cilantro.
Preheat grill. For the burgers, mix the beef with the egg and season to taste. Knead well and shape into 4 burgers. Grill 5 mins each side, or until cooked as desired.
Toast buns on grill, 1 min each side. Fill with the lettuce, burgers and tomato slices. Add a dollop of relish to each and serve with the rest of the relish in a bowl.
