Frying Pan Lasagne - cooking recipe

2 tbsp olive oil
1 lb Italian sausages, skins removed
1 None onion, thinly sliced
2 cloves garlic, crushed
2 3/4 cups tomato puree
4 sheets fresh lasagne, each cut into 3 pieces
4.25 oz mozzarella, grated
Preparation

Heat oil in a heavy-based frying pan on medium. Brown sausages for 4-5 mins, breaking up lumps with a wooden spoon. Add onion and garlic and cook for 3-4 mins.
Increase heat to high. Stir in tomato puree and bring to a boil. Reduce heat to low and simmer, uncovered, for 8-10 mins, until thickened. Season to taste.
Pour 1/2 cup sauce into an 8 inch oven-safe frying pan. Place 3 pasta pieces over sauce to cover. Top with one-third each of remaining sauce, cheese and pasta. Repeat layers, finishing with sauce and cheese. Cook over medium heat for 8-10 mins.
Meanwhile, preheat broiler on medium. Place pan under broiler for 2-3 mins, until cheese is golden. Allow to stand for 5 mins before serving.
