Spinach And Lentil Salad - cooking recipe

Ingredients
    1 tsp lemon zest
    2 tbsp lemon juice
    1 tsp minced garlic
    1 tsp tomato paste
    1/4 tsp ground cumin
    3 tbsp olive oil
    4 oz baby spinach
    1 (15 oz) can red lentils, rinsed and drained
    1/2 cup diced cucumber
    1/2 cup halved and sliced radish
    1/4 cup diced red pepper
    2 tbsp fresh chopped chives
    1 tsp fresh chopped thyme leaves
Preparation
    Whisk together lemon zest, lemon juice, garlic, tomato paste, cumin and olive oil. Season.
    Arrange spinach on a serving platter. Toss together lentils, cucumber, radish, red pepper, chives and thyme with 1/2 the dressing then arrange over spinach. Drizzle with remaining dressing.
