Nacho Bites - cooking recipe

Ingredients
    20 None large round corn chips
    1 tbsp vegetable oil
    1 lb mini beef meatballs, uncooked
    10 oz chunky mild salsa
    1/2 cup grated cheddar
    1/2 None mini cucumber, finely chopped
    1/4 None small red peppper, finely chopped
    1 tbsp coarsely chopped cilantro
    None None sour cream, to serve
Preparation
    Preheat the oven to 350\u00b0F. Line a baking tray with parchment paper. Arrange the corn chips. in a single layer, on the prepared tray.
    Heat the oil in a medium frying pan over a moderate heat. Add the meatballs and cook, turning, for 5 mins or until seared. Add the salsa to the pan and bring to a boil. Reduce the heat and simmer, uncovered, for 8-10 mins or until the sauce thickens slightly and the meatballs are cooked. Remove from the heat.
    Top each corn chip with a meatball and some sauce. Sprinkle with cheese and bake for 6-8 mins or until golden brown.
    Meanwhile, to make the cucumber salsa, combine the cucumber, pepper and cilantro in a small bowl. Top the nacho bites with the cucumber salsa and a dollop of sour cream. Serve at once.
