Green Beans With Sage And Pancetta - cooking recipe

Ingredients
    1 lb thin green beans
    2 oz pancetta, chopped
    2 tbsp olive oil
    1 None red pepper, sliced
    1 tbsp minced shallot
    1 tsp chopped fresh sage leaves
    1 tbsp white wine
Preparation
    Blanch green beans in boiling salted water for 2 mins. Shock in ice water then drain and pat dry.
    In a frying pan over medium heat, cook pancetta until crisp, about 3-4 mins. Drain on paper towels. Discard fat. Add 2 tsp olive oil to pan and cook red pepper and shallot for 2 mins, or until slightly soft. Add beans, sage and wine. Cook, tossing occasionally, to warm beans. Season.
