Banana Jam - cooking recipe

Ingredients
    3 1/3 lb just ripe bananas, coarsely chopped
    1/3 lb lime juice
    1/2 tsp ground cinnamon
    1 None vanilla bean, split lengthwise, seeds scraped out
    4 1/2 cups granulated sugar
Preparation
    Combine banana, lime juice, cinnamon, vanilla bean seeds and 1/2 cup water in a large saucepan. Bring to a boil and cook, covered, for about 10 mins, or until banana is soft.
    Add sugar and stir over medium-high heat, without boiling, until sugar dissolves. Bring to a boil and cook for about 20 mins, or until jam jells when a drop is placed on a frozen plate.
