Gluten Free Banana Coconut Pancakes - cooking recipe

Ingredients
    1/2 cup palm sugar
    4 None bananas, 2 mashed, 2 sliced
    3/4 cup rice flour
    3/4 cup all-purpose flour
    1/2 cup coconut milk
    1 None large egg
    None None Canola oil, for frying
    None None Ice cream, to serve (optional)
    None None Lime wedges, to serve
Preparation
    Place the palm sugar and 1/4 cup water into a small saucepan and bring to a boil. Reduce heat and simmer until mixture reaches a syrup consistency.
    Place the mashed banana, flours, coconut milk and egg into a bowl and mix thoroughly to combine.
    Heat a little oil in a frying pan over medium heat and place a heaped spoonful of batter into the pan. Cook until bubbles appear on the surface, then turn and cook until golden.
    Place the pancakes on serving plates and top each with sliced banana, a scoop of ice cream (if desired) and a lime wedge. Drizzle with palm sugar syrup.
