Chicken And Zucchini Packets - cooking recipe

Ingredients
    4 small boneless skinless chicken breasts
    1 tbsp olive oil, plus additional, to serve
    1 tbsp Dijon mustard
    2 medium zucchini, sliced on the diagonal
    7 oz cherry tomatoes, halved
    1/3 cup chopped mixed herbs, such as parsley, thyme and chives
Preparation
    Preheat the oven to 375\u00b0F. Pat dry chicken with paper towels. Heat oil in a large skillet on medium heat. Cook chicken for 1-2 mins each side, until browned.
    Place chicken breasts on large individual pieces of parchment paper. Coat chicken on both sides with mustard. Top with zucchini, tomatoes and herbs. Season to taste. Fold parchment paper over chicken, sealing the edges to form packets. Arrange on a baking pan.
    Bake for 15 mins until chicken is cooked through. Place packets on serving plates and open. Drizzle with extra olive oil.
