Chili Lime Tiger Shrimp Salad - cooking recipe
Ingredients

5 1/4 oz package mixed greens
1 bunch spring onions, finely sliced
None None Zest from 1/2 lime, removed with vegetable peeler or paring knife and then cut into thin matchsticks
1 handful fresh cilantro leaves
7 oz ready-to-eat tiger shrimp
1/2 None red chili, seeded and finely chopped
None None For the Dressing
6 tbsp mayonnaise
None None Juice of 1 lime
None None Finely grated zest of 1/2 lime
None None Poppadums, or other crisp flatbread, to serve
Preparation

Place greens in a bowl. Add onions, lime zest, cilantro leaves, shrimp and chili. Toss ingredients together.
Arrange salad in 4 serving bowls. Place the dressing ingredients in a bowl and season. Whisk together then drizzle over the salad. Serve with poppadums.
