Easy Mediterranean Fish Skewers - cooking recipe

Ingredients
    1 1/2 lb white fish fillets, cut into chunks
    1 None lemon, juiced, plus lemon wedges to serve
    2 tbsp chopped fresh mint leaves, plus extra leaves to serve
    1 tbsp honey
    2 None yellow peppers, cut into 1 inch pieces
    1 (10 oz) jar anchovy-stuffed green olives
Preparation
    Preheat broiler.
    Combine fish, lemon juice, chopped mint and honey. Season. Thread onto skewers alternating with peppers and olives. Broil for 6 mins, turning halfway, until lightly browned and fish is just cooked through.
    Serve skewers with lemon wedges. Sprinkle with mint.
