Open Ham, Asparagus And Pepper Sandwiches - cooking recipe

Ingredients
    8 spears asparagus, woody ends snapped off, halved lengthways
    150 g cream cheese
    2 sprigs fresh flat-leaf parsley, finely chopped, plus extra for garnish
    1/2 tsp sweet smoked paprika
    4 slices pumpernickel
    4 slices Parma ham
    150 g roasted red peppers in oil, drained and cut into strips
Preparation
    Blanch the asparagus in boiling salted water for 2 mins. Drain and refresh with cold water.
    Mix the cream cheese, parsley and paprika in a small bowl. Season with salt and black pepper.
    Spread the bread with the cream cheese. Top with the prosciutto, asparagus and peppers. Garnish with additional parsley.
