Szechuan Chicken Salad - cooking recipe
Ingredients

8 oz cooked chicken breast, skin removed, shredded into long strips
1 None cucumber, cut lengthwise into thin slices, then into 2 inch strips
4 None spring onions, cut into thin strips
1 oz fresh cilantro leaves, chopped
1 tbsp light soy sauce
1 tsp sesame oil
1 tsp dried chili flakes
1/2 tsp finely ground Szechuan pepper, plus extra, to serve
Preparation

Combine all ingredients in serving bowl. Sprinkle with extra Szechuan pepper and a little salt to serve.
