Lamb Chops With Tomato And Cilantro Salsa - cooking recipe

Ingredients
    1 tsp ground coriander
    1/2 tsp ground cumin
    2 cloves garlic, crushed
    1 tsp olive oil
    2 tbsp finely grated lemon peel
    1/4 cup lemon juice
    12 None lamb chops, french trimmed
    None None FOR THE TOMATO AND CILANTRO SALSA
    2 small tomatoes, finely chopped
    1 small red onion, finely chopped
    1 clove garlic, crushed
    1 tbsp red wine vinegar
    1 tbsp finely chopped fresh cilantro
Preparation
    Combine spices, garlic, oil, and lemon peel and juice in a shallow dish. Add lamb chops; rub mixture all over lamb. Let stand 10 mins.
    Meanwhile, for the tomato and cilantro salsa, combine all ingredients in a medium bowl. Season to taste.
    Heat an oiled grill pan on high heat or preheat the grill to medium-high. Cook lamb chops until browned on both sides and cooked to desired doneness.
    Serve lamb chops topped with salsa.
