Ham, Turkey And Roasted Vegetable Sandwiches - cooking recipe

Ingredients
    1 loaf French bread
    1/3 cup mayonnaise
    1/4 cup wholegrain mustard
    7 oz cooked ham, thinly sliced
    3 oz roasted eggplant antipasti (from a jar), drained
    3 oz roasted red pepper antipasti (from a jar), drained
    7 oz roast turkey, thinly sliced
    1/2 cup canned button mushrooms, drained
    1/2 cup sundried tomatoes, drained
    2 cups arugula
Preparation
    Using a serrated knife, slice bread in half lengthwise.
    In a small bowl, combine mayonnaise and mustard. Spread one third of the mixture inside the loaf.
    Place ham in the loaf, then layer the eggplant, pepper and turkey on top. Spread the turkey layer with half the remaining mayonnaise mixture.
    Scatter with mushrooms and sundried tomatoes, pressing down gently. Spread with remaining mayonnaise mixture and top with arugula. Replace the bread lid, pressing down firmly.
    Tie kitchen string firmly around the loaf, then wrap tightly in plastic wrap. Chill for 2-3 hours, until firm. Serve cut into wedges.
