Hoisin Chicken With Veggie Rice - cooking recipe

2 tsp vegetable or peanut oil
2 1/4 lbs chicken drumsticks
2 cloves garlic, crushed
2 tsp finely grated fresh ginger
1 jar (8 oz) hoisin sauce
1 tbsp honey
3 None green onions, cut into 1-inch lengths
1 tbsp sesame seeds, toasted
1 pkg (16 oz) frozen Asian stir-fry vegetables
2 cups cooked long-grain white rice
Preparation

Heat a wok or large skillet on high heat. Add oil; swirl to coat surface. Stir-fry chicken, in batches, for 5 mins or until browned. Add garlic and ginger; stir-fry for 30 seconds or until fragrant.
Reduce heat to medium. Add hoisin sauce, honey and 1/4 cup water; stir-fry for 8-10 mins or until chicken is cooked through. Add onion and 1/2 the sesame seeds; toss to combine.
Mix vegetables and rice in a large microwave-safe bowl. Cover with plastic wrap. Microwave on high (100%) for 5 mins or until heated through. Divide rice mixture among serving bowls. Top with chicken. Serve sprinkled with remaining sesame seeds.
