Crusted Salmon Fillets - cooking recipe

Ingredients
    1 1/2 cups stale bread, torn
    1/2 cup grated Parmesan cheese
    1/2 bunch parsley, leaves picked
    1 None lemon, peel grated, plus wedges to serve
    None None Olive oil, for drizzling
    4 None skinless salmon fillets (5 oz each)
    None None Salad, to serve
Preparation
    Preheat the oven to 400\u00b0F. Line a baking pan with foil.
    Combine bread, Parmesan cheese, parsley and lemon peel in a food processor. Process until fine crumbs form. Add a little olive oil to moisten. Pulse to combine.
    Arrange fish on prepared pan. Press on an even amount of crumb mixture. Drizzle with a little olive oil. Season to taste.
    Bake 10-12 mins, until fish flakes easily when tested with a fork and crust is golden. Serve with lemon wedges and salad, if desired.
