Hearty Minestrone - cooking recipe

Ingredients
    2 tbsp olive oil
    2 links beef sausages
    1 None onion, finely chopped
    2 None garlic cloves, crushed
    1 stalk celery, chopped
    1 None carrot, chopped
    1 None zucchini, chopped
    4 cups vegetable or chicken stock
    1 can (28 oz) crushed tomatoes
    1 can (14 oz) cannellini beans, drained and rinsed
    8 cups finely shredded cabbage
    1/4 cup small shell pasta or other small soup pasta
    2 tbsp chopped parsley
    None None Crusty bread, to serve
Preparation
    Heat 1 tbsp of the oil in a large saucepan on high heat. Brown sausages for 2-3 mins, turning. Cool slightly. Slice and set aside.
    Heat remaining 1 tbsp oil in pan on high heat. Add onion and garlic and saute for 2-3 mins until tender. Add celery, carrot and zucchini and saute for 4-5 mins until tender.
    Return sausages to pan. Add stock, tomatoes and 2 cups water. Bring to a boil. Reduce heat to low and simmer for 30 mins. Stir in beans, cabbage and pasta. Simmer for 8-10 mins or until pasta is tender. Stir in parsley. Serve with crusty bread.
