Orange Polenta Cake - cooking recipe
Ingredients

1 None small orange, peeled, thinly sliced
3 None eggs, at room temperature
1 1/4 cups granulated sugar
2 tsp orange zest
1/2 cup olive oil
1 cup self-rising flour + 2 tbsp
1 cup instant polenta
1/2 cup freshly squeezed orange juice
None None strawberries, to serve

Preheat oven to 350\u00b0F. Grease and line an 8 inch cake pan with parchment paper. Arrange orange slices over base of prepared pan.
Whip eggs for 3 minutes, or until well combined. Gradually whisk in 1 cup sugar, until combined. Add orange zest. Gradually whisk oil then sift and fold in flour. Add polenta and mix until just combined. Transfer to prepared pan, smooth surface and bake for 30 mins, or until a skewer inserted in the center comes out clean.
Meanwhile, heat orange juice and remaining sugar over low heat. Cook, stirring, for 2-3 mins, or until sugar dissolves. Bring to a boil, reduce heat and simmer, uncovered, for 5 mins, or until thickened slightly. Remove from heat.
Turn cake out onto a serving plate. Using a skewer, pierce several holes in top of cake. Drizzle 1/2 the hot syrup over hot cake. Set aside for 5 mins. Serve with remaining syrup and strawberries.
