No Bake Orange Macadamia Cheesecake - cooking recipe

Ingredients
    None None For the Crust
    5 1/4 oz Graham crackers, broken
    1 cup macadamias, lightly crushed
    1/2 cup butter, melted
    1/4 tsp ground cinnamon
    1 cup orange juice
    None None For the Cheesecake
    1 cup sugar
    4 large eggs, separated
    None None Finely grated zest of two oranges
    1/2 tbsp powdered gelatin
    1/3 cup just-boiled water
    1 lb cream cheese, at room temperature
    1 1/4 cups heavy cream, whipped
    None None orange segments, to serve
Preparation
    Lightly grease a 11-inch springform pan.
    Place crackers and half the nuts in a food processor and process until finely crushed. Add butter and cinnamon. Process until combined.
    Press mixture firmly into base of prepared pan. Chill for 15 minutes, until firm.
    Make Filling: combine juice, sugar, egg yolks and zest in a heatproof bowl. Whisk over a saucepan of simmering water for 4-5 minutes until thick and frothy. Remove from heat.
    Meanwhile, in a small bowl, whisk gelatin briskly into water with a fork until dissolved. Cool slightly.
    In a small bowl, using an electric mixer, beat cream cheese until smooth. Gradually blend in egg and gelatin mixtures. Transfer mixture to a large bowl. Fold cream through.
    Whisk egg whites in medium bowl until soft peaks form. Fold into cheese mixture.
    Pour into prepared pan. Top with remaining macadamias. Chill for 3 hours or overnight. Serve topped with orange segments.
