Orange Fudge Cupcakes - cooking recipe

Ingredients
    1 cup self-rising flour
    1/2 cup sugar
    18 tbsp butter, melted and cooled
    1/2 cup milk
    2 None large eggs
    1 tsp orange extract
    7 oz chocolate fudge, finely chopped
    2 tsp orange zest
    2/3 cup powdered sugar
    2 tbsp orange juice
Preparation
    Preheat oven to 375\u00b0C. Line a 12-cup muffin pan with paper liners. For the batter, combine the flour and sugar in a large bowl. Whisk half the butter with the milk, eggs and orange extract in a bowl. Make a well in center of the flour mixture, add the butter mixture and stir from the edges until just combined. Add 3/4 of the fudge and stir until just combined. Spoon the mixture into the paper liners and bake for 15-20 mins, until a skewer comes out clean. Transfer the cupcakes to a wire rack to cool.
    For the orange icing, beat the remaining butter with an electric hand mixer until light and creamy. Add the zest and sift in the powdered sugar in batches, beating well after each addition. Add the juice, 2 tsp at a time, until the icing is spreadable. Spread on the cooled cupcakes and sprinkle with the remaining fudge to serve.
