Plum Jam - cooking recipe

Ingredients
    2 3/4 lb plums, pitted and chopped
    3-5 tbsp fresh ginger, peeled and finely chopped
    3 None cardamom pods
    2 1/2 cups granulated sugar (or preserving sugar, if available)
Preparation
    Place the plums, ginger, cardamom pods and sugar in a pot with 3/4 cup water. Bring to a boil then simmer gently for about 1 hour. Turn up the heat and boil vigorously for at least 3 mins, until setting point has been reached (place a small amount of the jam on a cold saucer; if the jam wrinkles when pushed with a spoon, it is ready).
    Pour the jam into sterilised jars, screw the lids on tightly for 2 mins, then loosen slightly and allow to cool.
