Tofu And Cannellini Bean Patties - cooking recipe

Ingredients
    1 can (15 oz) cannellini beans, drained
    12 oz firm tofu, chopped
    1/2 cup fresh whole wheat breadcrumbs
    1/4 cup self-rising flour
    3 None green onions, thinly sliced
    1/4 cup grated Parmesan cheese
    1 None egg, beaten
    2 tbsp sweet chili sauce
    1 1/2 tbsp chopped cilantro
    1 1/2 tbsp chopped mint
    1/2 None lemon, juiced
    1/2 cup flour, seasoned with salt and pepper
    None None Olive oil, for shallow frying
    None None Salad, to serve
    None None Sweet chili sauce, to serve
Preparation
    Place beans, tofu, breadcrumbs, self-rising flour, green onions, Parmesan cheese, egg, sweet chili sauce, herbs and lemon juice in a food processor and process until combined. Season to taste. Refrigerate for 30 mins, until firm enough to handle.
    Using 1/4-cup measure, shape mixture into 8 patties. Dust patties in flour, shaking off excess.
    Heat a little oil in a large skillet on medium heat. Fry patties for 1-2 mins each side, until golden. Drain on paper towels. Serve with salad and sweet chili sauce.
