Köttbullar (Swedish Meatballs) - cooking recipe

2 1/4 lb potatoes, peeled and halved
2 1/4 lb ground beef
1 None large onion, peeled and finely chopped
2 None eggs
3 tbsp breadcrumbs
1 pinch ground nutmeg
1 pinch ground coriander
1 pinch ground cardamom
1 tsp paprika
3 tbsp oil
1 1/4 cup vegetable stock
3/4 cup heavy cream
2 tbsp all-purpose flour
1 bunch fresh parsley, chopped
Preparation

Cook the potatoes in boiling salted water for about 20 mins.
Meanwhile, mix together the ground beef, onion, egg, breadcrumbs and spices. Season. With slightly damp hands, shape the mixture into about 48 small meatballs. Heat the oil in a large skillet and sear the meatballs for about 5 mins, turning them as necessary. Remove from the pan and keep warm. Pour the stock and cream into the hot pan and bring to a boil. Mix the flour with a little water until it is smooth and stir into the sauce. Simmer over low heat for about 5 mins and season it to taste.
Drain the potatoes and sprinkle them with the parsley. Serve the meatballs and sauce with the potatoes on the side.
