Hawaii Toast - cooking recipe

Ingredients
    2 tbsp oil
    4 None pork cutlets (about 120g each)
    200 g carrots, halved lengthways and thinly sliced
    300 g apricots, pitted and diced
    75 g almonds, coarsely chopped
    2-3 tbsp apricot jam
    4 thick slices white bread
    150 g gouda, grated
    5 stems parsley, chopped
Preparation
    Heat oven to 425\u00b0F. Heat oil in a pan and brown the pork for about 2 mins on each side until cooked through. Season with salt and pepper then set aside.
    For the apricot sauce, add the carrots to the pan and saute for 3 mins. Stir in the apricots and almonds and saute 3 more mins. Season with salt and pepper, stir in the jam to heat through, then remove from the heat.
    To assemble, place the bread slices on a lined baking sheet. Top with the pork and apricot sauce. Sprinkle with cheese and bake for about 10 mins until the cheese is golden. Serve with a sprinkling of chopped parsley.
