Salsa Verde - cooking recipe

Ingredients
    3.5 oz day-old ciabatta, coarsely chopped, crust removed, soaked in 2 cups water for 10 mins, excess water squeezed out
    4-5 sprigs fresh mint, leaves picked
    1 bunch fresh flat-leaf parsley, leaves picked
    1 tbsp capers
    1 clove garlic, chopped
    2 None anchovy fillets, chopped
    1 tbsp lemon juice
    1/4 cup extra virgin olive oil
Preparation
    In a food processor, process all ingredients until well combined. Season to taste.
