Barley And Kale Soup - cooking recipe
Ingredients

1 kg kale, washed and tough stalks removed
1 None onion, finely diced
2 None garlic, finely chopped
3 tbsp oil
1 litre vegetable stock
125 g pearl barley
100 g raisins
60 g pine nuts
2 tsp cumin
2 tsp curry
None None creme fraiche, to serve
Preparation

Blanch the kale in boiling water for 4-5 mins. Drain well and let cool. Coarsely chop the kale. Heat the oil in a saucepan and saute the onion and garlic. Add the kale and saute briefly. Season well and add the stock.
Add the pearl barley and raisins and cook on a low heat at a simmer for 20-30 minutes. Meanwhile, dry roast the pine nuts in a frying pan until golden brown. Shortly before the end of cooking add the pine nuts to the kale mixture and stir. Add the curry powder and cumin and season to taste. Serve in bowls, garnished with a dollop of sour cream.
